We try to eat a great deal of veggies in our house, and with just two of us at household now, I normally constantly cook dinner too much. Each my husband and I like to delight in the leftover veggies the pursuing working day for lunch, so owning a lot of leftovers around isn’t seriously a dilemma. One particular of my most loved ways to prepare veggies these kinds of as beans, broccoli, cauliflower or asparagus is to flippantly blanch them and then rapidly sauté them in a mixture of olive oil, pink pepper flakes, and seasonings. Considering that I was sent a box entire of scrumptious solar-dried tomatoes, I also included some of these in this broccoli dish which brings a vivid, sweet flavor to what could be a uninteresting broccoli dish.

This calendar year we are focusing far more on plant-based mostly meals, and have accomplished a great deal of research the previous pair of months about nourishment. Broccoli is frequently an underappreciated vegetable, and is an fantastic resource of vitamin K, vitamin C, chromium, and folate. It is also a really good resource of dietary fiber, pantothenic acid, vitamin B6, vitamin E, manganese, phosphorus, choline, vitamin B1, vitamin A, potassium, and copper.

Buon Appetito!
